Filling:

  • 1 cup pumpkin puree
  • 3 apples, peeled, cored, and sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon honey (or any sweetener of choice)
  • 1 teaspoon pumpkin spice

Topping:

  • 1 1/2 cup oats
  • 1 tablespoon brown sugar
  • 1 tablespoon honey
  • 25g butter, melted
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon pumpkin spice

Instructions

  •  Preheat your oven to 350°F (175°C).
  • In a large bowl, mix the pumpkin puree, apple slices, lemon juice, honey, and pumpkin spice. Make sure the apples are well-coated with the pumpkin mixture.
  • Spread the pumpkin and apple mixture evenly in a greased baking dish (about 8x8 inches).
  • In another bowl, combine the oats, brown sugar, melted butter, melted coconut oil, and pumpkin spice. Mix until the mixture is crumbly.
  • Sprinkle the oat mixture over the pumpkin and apple filling in the baking dish.
  • Bake for 35-40 minutes, or until the top is golden brown and the filling is bubbly.
  • Let the crisp cool for about 10 minutes before serving. Enjoy it warm with a scoop of vanilla ice cream or a dollop of whipped cream.
