Ingredients

Yogurt bark has been around for a while, but its popularity soared with the rise of social media food trends. It’s a simple treat that can be customized to suit any taste, making it a favorite among both kids and adults.

ingredients on a table.

Greek Yogurt is the base of this recipe, providing a creamy texture and rich flavor. It's high in protein and contains probiotics, which can be good for gut health.

Honey or Maple Syrup adds a natural sweetness to the bark. Honey is rich in antioxidants and has antibacterial properties, while maple syrup offers a unique, earthy flavor. You can also substitute agave nectar or a sugar-free syrup if you are watching your sugar intake.

Vanilla Extract enhances the flavor of the yogurt, giving it a warm, aromatic touch.

Unsweetened Shredded Coconut provides a delightful texture and a hint of tropical flavor.

Mixed Berries like strawberries, blueberries, and raspberries not only add vibrant color but are also packed with vitamins, antioxidants, and fiber. Fresh berries are ideal, but you can use frozen or even freeze-dried berries in a pinch.

Chopped Nuts such as almonds and walnuts give the bark a satisfying crunch and are a good source of healthy fats, protein, and essential nutrients like vitamin E and magnesium.

Each of these ingredients contributes to the overall flavor, texture, and nutritional value of the coconut yogurt bark, making it a healthy treat that you can enjoy guilt-free!

  1. Place the baking sheet in the freezer for at least 2-3 hours, or until the yogurt is fully frozen. Once frozen, remove the yogurt bark from the freezer and break it into smaller pieces.

Hint: crumple the parchment paper into a ball just as you would a scrap of paper. Then, gently uncrumple it and it will lay reasonably flat, not budging on your baking tray and you will be able to spread a yogurt mixture more evenly.

Substitutions

Dairy-Free Yogurt: Use a vegan yogurt for a dairy-free option.

Sweeteners: Swap honey or maple syrup with agave nectar or a sugar-free syrup if preferred.

Nuts and Berries: Use any type of berries or nuts you like. Goji berries, chia seeds, or freeze-dried raspberries are great alternatives.

Variations

The best part about making Coconut Yoghurt Bark is how customizable it is! Here are some delicious variations you can try to suit different tastes and dietary preferences:

Nutella and Banana: For a rich and indulgent twist, swirl some Nutella into the yogurt mixture before freezing. Add thin slices of banana on top for a sweet and creamy combination that’s sure to satisfy your sweet tooth.

Peanut Butter and Chocolate Chips: Peanut butter lovers will enjoy adding dollops of peanut butter to the yogurt mixture. Sprinkle some chocolate chips on top for a classic flavor combo!

Tropical Version: Add chunks of pineapple, mango, and kiwi to the yogurt mixture for a tropical twist.

Granola and Honey: For a breakfast-inspired version, stir some granola into the yogurt mixture and drizzle honey on top.

Matcha and Pistachio: For a unique and sophisticated twist, add a teaspoon of matcha powder to the yogurt mixture. Top with vibrant green pistachio nuts.

Vegan and Gluten-Free: For a vegan version, use dairy-free yogurt and maple syrup instead of honey. You can add gluten-free granola, nuts, and fresh fruit for a completely vegan and gluten-free treat.

Kid-Friendly Fun: Get the kids involved by adding colorful toppings like sprinkles or mini M&Ms. You can also use fun-shaped silicone molds to create yogurt bark in different shapes and sizes. This version is perfect for getting children excited about eating a healthy snack.

Equipment

  • Medium bowl for mixing
  • Baking sheet
  • Sheet of parchment paper
  • Freezer bag or airtight container for storage

Storage

Store any leftover coconut yogurt bark in an airtight container or zip-lock bags in the freezer. This will help prevent freezer burn and keep your treat fresh for longer.

You can freeze Coconut Yogurt Bark for up to 2 months.

Top tip

For the best texture and flavor, spread the yogurt mixture to an even layer on the baking sheet and freeze it quickly. This helps the bark freeze uniformly, making it easier to break into pieces

FAQ

Can I use regular plain yogurt instead of Greek yogurt?

Yes, but Greek yogurt is thicker and gives a creamier texture.

Is this recipe suitable for children?

Yes, this recipe is perfect for kids. You can even involve them in the process of making the bark, and customize it with fun toppings like sprinkles or mini chocolate chips.

How long does it take for the yogurt bark to freeze completely?

It typically takes about 2-3 hours for the yogurt bark to freeze completely, depending on the thickness of the layer and your freezer's temperature.

What can I use if I don't have parchment paper?

If you don’t have parchment paper, you can use wax paper or a silicone baking mat. Both work well to prevent the yogurt bark from sticking to the baking sheet.
