Enjoy a tasty and healthy snack with our Coconut Yogurt Bark recipe! This frozen treat is easy to make, customizable, and perfect for hot days.

Ingredients

  • 2 cups Greek yogurt, plain
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut (unsweetened)
  • 1/2 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/4 cup chopped nuts (almonds, walnuts, or your favorite)
  • 1 tablespoon chia seeds (optional)
  • 1 scoops protein powder (optional)

Instructions

  • In a mixing bowl, combine the Greek yogurt, honey or maple syrup, and vanilla extract. Gently fold in the shredded coconut.
  • Line a baking sheet with parchment paper. Pour the yogurt mixture onto the sheet and spread it into an even layer.
  • Cut strawberries into slices and raspberries into halves.
  • Top the yogurt with the berries and nuts. Sprinkle with chia seeds (optional).
  • Place the baking sheet in the freezer for at least 2-3 hours, or until the yogurt is fully frozen.
  • Once frozen, remove the yogurt bark from the freezer and break it into smaller pieces.

Notes

I like to add 1 scoop of vanilla protein powder to yogurt for extra protein.
